1 lb. ground beef
1 packet taco seasoning
1 small can green chiles
1 can diced tomatoes
1 can spiced black beans
2 cups (8 oz) shredded cheese plus some to sprinkle on top.
2 tsp cumin
flour tortilla shells
1 can enchilada sauce
Sour cream to top final product
Preheat oven to 375 degrees
Brown the ground beef, add the taco seasoning packet as meat is cooking.
In a separate bowl add tomatoes, beans, drained, not rinsed, green chiles, cumin, and cheese.
Add cooked meat to the mixture.
Grease a 9x13 pan. Apply spoonfuls of mixture to tortillas, roll them up and place them in the pan. Sprinkle remaining cheese on top, evenly pour enchilada sauce over the top.
Bake for 25 minutes. Top with sour cream.
